About Legacy Cove

For Kitty Assenmacher, the path to Legacy Cove began long before she entered the world of business. In high school, she spent her days volunteering at local nursing homes, eventually leading a group and raising funds to bring joy and creativity to seniors through crafts. Though her career took her into two decades of small business leadership, mastering everything from sales and marketing to real estate, the heart for senior care never left her. Today, Kitty combines those professional skills with her lifelong passion to create the ‘Gold Standard’ in assisted living alongside her husband, Mat, a U.S. Coast Guard veteran and local firefighter. Together, they bring a unique blend of strategic vision and a deep, protective commitment to service.

This mission became personal when we began searching for care for our own family members. After touring over 15 local facilities, we were struck by how many felt cold and institutional. Nowhere felt like a place we would be confident moving our parents to, so we decided to build the home we wanted them to live in. As Parrish neighbors who live, work, and play in this community, we are honored to bring the first boutique residential mansions to the Manatee and Sarasota markets, a family business where even our daughter learns the value of hard work and community impact. We aren’t just owners; we are partners building a landmark of dignity, solving a local ‘care desert’ with a home built on a foundation of expertise, transparency, and love.
